The effects of different environmental factors (nutrient deprivation, hyperosmotic shock, exposure to light) on enteric bacteria which have been transferred into the marine environment, have been studied experimentally (microcosms) by considering demographic, physiological and genetic responses in Escherichia coli or Salmonella typhimurium populations. Short-term experiments (less than or equal to 48 h) showed that nutrient deprivation induced limited changes in measured bacteriological variables, but when combined with hyperosmotic shock, it results in an energy charge decrease and inactivation of membrane transport. Fishing and trade of living crustaceans are dynamic commercial sectors in France. 25 000 tons of local or imported crabs, lobsters , crawsfishes are yearly treated. Based upon a literature review and fishmongers interviews, this study describes the current pratices and problems associated to live crabs and lobsters storage. Supply conditions of live crustaceans, marketing networks, and biological, ecological and physiological characteristics of crustaceans were discussed. Morever, storage facilities, their operating rules and factors affecting the survival rate under storage and transportation conditions were reviewed. |

L'étude du mouvement des valves d'huîtres fournit des renseignements précieux sur le comportement de ces mollusques et sur leur réaction à différentes conditions de milieu. De nombreux auteurs ont souligné le rôle des mouvements valvaires dans les fonctions de nutrition, de respiration, d'excrétion de substance de déchet et de lutte contre des conditions défavorables. Dès 1921 T. C. Nelson étudie l'activité de Crassostrea virginica en fonction de la marée et la lumière; A. E.
